A Recipe for TAZ Pie

A Recipe for TAZ (Tomato and Zucchini) Pie

Wait for the power to go out, then decide it is time to work with a sharp knife in a dimly lit kitchen.

Start to make pie crust, then opt for a bed of rice because you've abused your wheat allergy enough in the past two weeks.

Take a pyrex baking dish and cover the bottom with a layer of precooked rice that you fortuitously prepared earlier.

Take several garden ripe tomatoes that your coworker gave you today and slice into 1/4 inch sections.

Take two zucchinis that were in the fridge and also slice into quarter inch sections.

Be glad you did not cut yourself in the process.

Open a bag of shredded part-skim mozzarella cheese rather than whole milk cheese as a sop to your nurse practitioner who told you to eat a low fat diet.

Place a layer of zucchini slices on the rice, then a layer of tomato slices, then sprinkle liberally with the shredded cheese. Grind a little pepper on top. Repeat.

Wait for the power to come back on so you can turn on the oven. In the interim, eat a candy bar and wonder what you are going to do about dinner if the electricity doesn't come back soon.

When the electricity doesn't come back on soon, eat cold cereal and go to bed early because there is nothing else to do.

The next day, bake at 350 degrees for about 25-35 minutes, enough to
thoroughly melt the cheese and cook the zucchini to desired doneness (I prefer a little on the less cooked side). Serve with fresh corn on the cob.
